After serving in the U.S. Army, Dustin spent a decade working into the Chicago health and wellness scene, collaborating with the high end fitness studios and national brands such as lululemon. While the majority of his career has been spent in fitness, the hospitality industry continued to pull Dustin in. In addition to working as a private chef for several high end clients in Chicago, Dustin curates intimate pop up dinning experiences throughout the city. Dustin uses these dinners as an opportunity to bring people together around the table and showcase globally inspired, Prixfixe tasting menus using seasonal and locally sourced ingredients.  While his journey in the culinary world has been unconventional, he has built a reputation of deep curiosity while laser-focused on excellence. Dustin provides a vibrant experience, shares his story and background selflessly, and creates memories for a lifetime.

I am a self taught chef who has taken advantage of opportunities to work with and learn from some of Chicago’s most talented chefs.

Food is the lens through which I see the world. It is how I experience people and places. Because of that, my style of cooking pulls from places I’ve been and people who have impacted my life. I pride my self in utilizing locally sourced, seasonal ingredients to craft dishes that are both elevated and soulful.

Where are you from?
I grew up in Kansas City (I love eating and making BBQ), but I have lived in Chicago for the past 14 years.
What's your favorite restaurant?
That changes so often, but currently it is John’s Food and Wine in Lincoln Park
What's your favorite thing to cook for yourself?
A big bowl of mussels in white wine with some crispy bread.
Why did you want to be a chef?
To make people smile.
If you're not in the kitchen - what are some of your hobbies & interests?
Hanging with my dog, Luca, traveling, and doing all things fitness.
